Stuck in a side-dish rut? Cauliflower bathed in rich cheese sauce might just become your new family favorite.
- One 3-pound head cauliflower, cored and cut into florets
- 2 tablespoons butter
- 2 cups whole milk
- 3 tablespoons all-purpose flour
- ⅔ cup Parmesan cheese
- 1 teaspoon salt
- ½ teaspoon pepper
- ½ cup panko or unseasoned breadcrumbs
Preheat the oven to 375°F.
In a large pot with a tight-fitting lid, bring an inch of water to a boil, then add the cauliflower. Steam, covered, for 3 to 4 minutes, then remove from the heat.
In a medium saucepan, melt the butter over low heat. Meanwhile, warm the milk in the microwave for about 1 minute. When the butter is melted, add the flour and stir constantly, about 1 minute. Add the milk in a slow stream and continue to stir until sauce thickens, about 5 minutes. Remove from the heat, then add the Parmesan, salt, and pepper.
Pour about one third of the sauce into the bottom of an oven-safe casserole dish. Add the cauliflower, then pour the remaining sauce over the cauliflower. Top with breadcrumbs. Bake for 25 minutes, or until the sauce is bubbling and the breadcrumbs are golden brown.
