Chili Roasted Peas

Nutritional yeast gives this crispy, protein-rich snack a cheesy flavor that goes great with a little mild chili powder.

  • Total Time: 45 minutes
  • Yield: 1 cup

  • 2 cups peas (fresh, or frozen and thawed)
  • 2 tablespoons olive oil
  • ½ teaspoon kosher salt
  • Pinch of ground black pepper
  • 1 teaspoon nutritional yeast
  • ½ teaspoon mild chili powder
  • ¼ teaspoon ground cumin

  1. Step 1

Heat oven to 400°F. If peas are wet, pat dry. Spread on a rimmed baking sheet, drizzle with olive oil, and sprinkle with salt and pepper. Stir gently to coat. Bake for about 40 minutes until browned and crispy.

  2. Step 2

Transfer to a mixing bowl and toss with the nutritional yeast, chili powder, and cumin. Roasted peas will keep for several days at room temperature in an airtight container.
