Spiced Nuts

Roasted nuts are the perfect go-anywhere snack, and can also jazz up a simple salad. Mix and match your spices to change the recipe according to your family’s tastes—they can go sweet or savory, salty or spiced. Our suggestions below are just the beginning.

  • ¼ cup granulated sugar
  • 1 spice mix blend (see options below)
  • 1 pound mixed nuts, unroasted and unsalted (about 3¼ cups)
  • 1 large egg white, lightly beaten
Crowd Pleaser
  • 1 teaspoon fine sea salt
  • 1 teaspoon ground cumin
  • 1 teaspoon ground coriander
  • ¾ teaspoon ground cinnamon
  • ½ teaspoon ground turmeric
  • ¼ teaspoon Aleppo pepper (or cayenne)
Happy Kids
  • ¾ teaspoon fine sea salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon cardamom
Spicy Curry
  • 1 teaspoon fine sea salt
  • 2 ½ teaspoons curry powder
  • 1 teaspoon nigella seeds
  • ½ to ¾ teaspoon cayenne


  1. Step 1

    Preheat the oven to 325°.

  2. Step 2

    In a small bowl, stir together the sugar and the spice combination of your choice.

  3. Step 3

    In a large bowl, stir together the mixed nuts (and seeds, if using) and the egg white until all the nuts are lightly coated.

  4. Step 4

    Add the sugar-spice mix to the nuts, and stir until evenly coated.

  5. Step 5

    Pour onto a lightly oiled sheet pan (or one lined with a silicone mat) and spread into a single layer.

  6. Step 6

    Roast for 15 minutes, then remove from the oven and stir so that the nuts on the edges move to the center and vice versa. Return to the oven and roast for an additional 15 minutes, then remove from the oven and cool.

    Store in an airtight container at room temperature for up to one month.
