Two-Ingredient Banana Pancakes
Can you really make a pancake from just two ingredients? Yes! These pancakes cook up into a tender, flavorful cake, ready for a drizzle of maple syrup.
- Yield: 2 pancakes
- 1 banana
- 2 eggs
- Coconut oil for frying
- Maple syrup and your favorite pancake toppings
Peel and slice a banana and place it in a mixing bowl. Use a fork to mash the banana until it is very smooth.
Crack the eggs into a bowl. Use a fork to whisk the eggs until blended, then add to the mashed banana, stirring until combined.
Ask an adult to heat ½ teaspoon coconut oil in a non-stick pan or electric griddle over medium heat. Add half of the batter to the pan and cook until the pancake begins to look dry and you can easily slide a spatula underneath it. Use the spatula to flip the pancake and cook the other side until golden brown. Transfer to a plate and repeat with remaining batter. Serve the pancakes with maple syrup and your favorite toppings.
